The heart disease frequency is low among the people living in Mediterranean countries. The Mediterranean diet contain low saturated fats when compared to American diet. The difference between the two diets of Mediterranean and American countries is the amount of monounsaturated fat.

People use olive oil in their diet and this the reason for presence of more monounsaturated fats. Olive oil is the rich source of oleic acid which is the common monounsaturated fatty acid present in the diet. Many reports suggest that monounsaturated fatty acids are more effective than polyunsaturated fats in lowering the LDL cholesterol and total blood cholesterol. And also monounsaturated fat doesn’t lower HDL (good) cholesterol or raise triglycerides.

Meat, poultry and marinading fish with olive oil adds a pleasant flavor to the food and healthy. Usually, baking involves lots of fat. Therefore, it is healthy to use olive oil which reduces fat quantity instead of using butter. Use olive oil less than 25% of the normal amount of butter.

The olive oil that is extra-virgin grade is expensive. So you can use it for dressings, vinaigrette and salads. If virgin and extra-virgin olive oils are subjected to high heat, they cannot maintain their flavor. Therefore, they are used only for uncooked food.

Foods like lemon juice, tomatoes, wine, vinegar contain high acid content. Acidity of such foods can be balanced by using olive oil for cooking them. It can also be useful in preparing appetizers. Olive oil doesn’t cause any ill effects when consumed in limited amount and required proportions. It is healthy to the heart and also adds taste to the food.
